Baby Back Ribs In The Oven
I know what you’re thinking, ribs belong on the grill…. Yes. There is certainly no doubt that a grill does wonderous things to ribs BUT a) it’s winter, and b) maybe you don’t have a grill or maybe you just don’t want to use it. SO, when you’ve got a little time but don’t want to spend it constantly stirring or actively cooking this recipe will yield you a scrumptious meal all while you multitask and check off some boxes on your list as it cooks.
Whole30 Baby Back Ribs In The Oven
To make this recipe Whole30 compliant just omit the honey and your meal will be Whole30. Great additions to this meal would be olives, sautéed kale in avocado oil with a squeeze of lemon or marinated olives.

True story, I actually didn’t grow up eating ribs, like at all. But before that deters you from thinking this recipe is legitimate, I do remember eating them a specific time at a friend’s house. Her dad was an amazing cook and they were seriously good! That night made an impression on me. I remember thinking ribs were an activity for those already acquainted, lol. It was a big gathering and ribs were the main course. My young self (teenage) tried eating them gracefully since there was this boy there…. But this boy (also teenage and hungry), had thrown all caution to the wind and dove face first into these ribs, even ending up with sauce on his socks….. Ok, I’m not sure how this story fits my recipe other than to say that this is my memory of eating ribs. And if you make these ribs and somehow get so enveloped in them that even your socks get involved I’ll consider that a serious compliment! 😉

Description
Easy sheet pan Baby Back Ribs with Caramelized Carrots! Slow roasted to perfection in the oven for an easy meal any night of the week!
Ingredients
Ribs:
- 1 rack of pork baby back ribs
- 1 teaspoon sea salt
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne powder (optional)
Carrots:
- 1 pound carrots, washed, peeled and cut into quarters until a 1/4 inch thick
- 1 teaspoon avocado oil
- 2 Tablespoons honey (for drizzling over carrots and ribs) (*Omit if on a Whole30)
Instructions
- Preheat oven to 300 degrees F. Line a baking sheet with parchment paper.
- Mix the dry rib spices together in a small bowl.
- Lay out the rack of ribs on your lined baking sheet and sprinkle and pat the dry spices into both sides of the rack.
- Bake the rack of ribs for 1 hour and 40 minutes.
- Just before the ribs come out of the oven, massage the carrots with oil. Then nestle them around the outside of the baking sheet around the rack of ribs.
- Return the ribs and carrots to the oven for 15 minutes to cook.
- Once the carrots are fork tender, remove the baking sheet from the oven. Switch the oven from bake to broil. Then drizzle the honey over both the ribs and carrots.
- Return the baking sheet to the oven under broil and keep a close eye on them. Depending on your oven and rack placement you will broil for about 5 minutes until your carrots have caramelized. (Don’t be tempted to multitask, be patient and watch them to ensure they reach the desired color and doneness desired.)
- Remove the baking sheet from the oven and allow the ribs to rest for 10-15 minutes before cutting and serving along with the carrots.
- Serve while warm and enjoy!
