Dill Roasted Potatoes – An easy healthy side dish with fresh herb flavor, crispy skins and tender creamy insides finished with flakey sea salt! Roast these babies in 30 minutes and pair with your favorite protein!

Roasted Potatoes with Dill

Growing up my house was definitely a meat and potatoes kind of household. Potatoes are easy, basic, on-budget and can go with just about anything. These Dill Roasted Potatoes are crispy on the outside, tender on the inside and covered in the bright fresh flavor of dill and flakey sea salt. It’s a winning combination to be sure and pairs easily with the protein of your choosing!

How to Make Dill Roasted Sheet Pan Potatoes

Step 1: Wash and dry your potatoes but leave the skins on, this is key since we’re going to make those skins crispy and full of flavor!

Step 2: Preheat your oven to 425 degrees fahrenheit. Then line a baking sheet with parchment paper.

Step 3: To your baking sheet add the potatoes, avocado oil, salt, black pepper and fresh dill. Toss everything together until the potatoes are evenly coated with oil, salt, pepper and dill. Then spread the potatoes out evenly over the baking sheet.

Step 4: Roast the potatoes in the oven for 15 minutes. Then stir the potatoes and roast for another 15 minutes until the potatoes are crispy on the outside and fork tender on the inside.

Step 5: Remove the potatoes from the oven and transfer them to a serving dish. Sprinkle the tops of the potatoes with flakey sea salt and more fresh dill. Serve with your favorite main course and enjoy!

To make these Dill Roasted Potatoes you’ll need a baking sheet, parchment paper, new potatoes, avocado oil, sea salt, freshly ground black pepper, fresh dill, flakey sea salt and a serving dish.

Ingredients

Scale
  • 1.5 pounds new potatoes (little potatoes) with skin on, washed and dried
  • 1 Tablespoon avocado oil
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 Tablespoons fresh dill, plus more for garnish
  • 1/2 teaspoon flakey sea salt

Instructions

  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Toss the potatoes, avocado oil, salt, pepper and dill on the baking sheet until the potatoes are evenly coated. Then arrange the potatoes evenly on the baking sheet.
  3. Roast potatoes in the oven for 15 minutes. Then remove the baking sheet to quickly stir and put the potatoes back in the oven for another 15 minutes until the potatoes are crispy on the outside and fork tender on the inside.
  4. Remove the baking sheet from the oven and transfer the potatoes to a serving dish.
  5. Sprinkle the tops of the potatoes with more fresh dill and flakey sea salt.
  6. Serve along side your favorite main course and enjoy!
