I’ll be honest, when I think of potato salad I usually picture the egg-heavy cold version that I’m not too crazy about. But this Hot German Potato Salad is incredible! I mean, I could eat this all day long… And I do until it’s gone! It makes an incredible Whole30 Potato Salad or side dish for just about anything.

What Is German Potato Salad?
Americans most likely picture potato salad as being mayo based with pickles, celery and cut up hard boiled eggs. German Potato Salad however is quite different as it’s an egg free potato salad. German Potato Salad is typically a warm dish where the potatoes are loaded with bacon and coated in a mouth-watering combination of vinegar and bacon grease. It’s simply amazing!
There are actually many different variations of German Potato Salad but the one I’m sharing with you today is associated with the Bavarian region of Germany.
Authentic Hot German Potato Salad With Bacon
This recipe is made with potatoes that are covered in a savory mixture of salty bacon, onion, garlic, tangy vinegar and mustard and bursting with fresh dill that brightens the dish up. It’s certainly authentic german potato salad!
German Potato Salad Warm or Cold
The great thing about this Hot German Potato Salad is that it’s great both warm or cold! Some days I like it warm but it’s also great cold on those hot summer days or for packing up in your picnic basket. If I had to choose though, I’d take this gluten free potato salad warm every time!
Is Potato Salad Gluten Free?
If you’ve ever asked the question, Is potato salad gluten free? The answer is, “it depends” however this potato salad recipe is naturally gluten free. It’s made with healthy whole food ingredients. The only ingredient you’ll need to verify is that you are using a gluten free mustard and you’re good to go!
How To Make Whole30 Potato Salad
To make this egg free potato salad, put the cleaned and cut potatoes in a large stockpot with 1 teaspoon salt and cover the potatoes with water until the water is an inch above the potatoes. Turn on the burner to high and cook for 15 minutes from the time you turn the burner on. The pot will boil once it heats up.
Cook the bacon and then set aside, keeping the bacon fat in the skillet. To the bacon fat, add the onion and sauté until tender. Then to the skillet with the onions add in the vinegar, mustard, garlic, salt and pepper. Cook until the sauce thickens a bit.
Drain the potatoes completely and transfer the potatoes to a large mixing bowl. Pour the sauce over top the potatoes until coated. Mix in the bacon and fresh dill. Serve and enjoy!
Paleo + Whole30 Potato Salad
I know there are some Paleo folks who aren’t going to agree that white potatoes are paleo but for the rest of us who do, this is truly an amazing dish. There will be no such quibble over this Whole30 Potato Salad, being Whole30 compliant however since Whole30 approved white potatoes several years ago. And I’m so glad so this dish can be made on repeat at all times of the year.
Tips For Making German Potato Salad With Dill
- Scrub your potatoes before you boil them.
- Salt the water before adding the potatoes to boil.
- Always start your potatoes in cold water before bringing them to a boil. If you put potatoes directly into boiling water, the outsides will cook immediately and the insides may take longer, resulting in unevenly cooked potatoes.
- Be very gentle when stirring the potatoes into the sauce at the end so that the potatoes retain their shape and don’t break apart.

Ingredients
- 1.5 lbs Yukon gold potatoes, washed and cut into 1 inch pieces
- 1 teaspoon sea salt (for boiling the potatoes)
- 1/2 lb bacon, chopped
- 1/2 cup yellow onion, minced
- 1/3 cup apple cider vinegar
- 1 Tablespoon compliant whole grain mustard (Whole30 compliant option linked)
- 1 Tablespoon minced garlic
- 1–1.5 teaspoons unrefined sea salt (depending on the saltiness of your bacon)
- 1/2 teaspoon freshly ground black pepper
- 3 Tablespoons fresh dill, chopped finely
Instructions
- Put the cleaned and cut potatoes in a large stockpot with 1 teaspoon salt and cover the potatoes with water until the water is an inch above the potatoes. Turn on the burner to high and cook for 15 minutes from the time you turn the burner on. The pot will boil once it heats up.
- In a skillet, cook the bacon for about 5 minutes over medium heat until cooked through. Then transfer the bacon to a paper towel lined plate and set aside. Keep the bacon fat in the skillet.
- To the bacon fat left in the skillet, add the onion and saute until tender (about 3-5 minutes).
- Then to the skillet with the onions add in the vinegar, mustard, garlic, salt and pepper. Cook over medium heat until the sauce thickens a bit.
- Drain the potatoes completely and transfer the potatoes to a large mixing bowl. Pour the sauce over top the potatoes until coated. Mix in the bacon and fresh dill and serve!
