Whole Roasted Butternut Squash

I love roasting a whole butternut squash! Not only is a whole squash fresher when you cut it yourself but you also get the seeds to roast and it tastes so creamy and delicious right out of the oven with only salt and pepper! As soon as I roasted up this squash and finished the photographs my daughter and I ate half this baby right on the baking sheet! So good!

How Long to Roast Butternut Squash

Butternut squash vary in size and thickness quite a bit so as a result the length of cooking will vary also. I’ve found that 45 minutes is a good starting point. After 45 minutes check and see if the squash is fork tender and if it’s not add more time until it is.

How To Cook A Butternut Squash

Butternut squash cooks easily in just a couple steps. Simply preheat the oven, slice your butternut squash in half lengthwise, scoop out the seeds (be sure to save the seeds for roasting), season and bake! It’s truly that simple.

Helpful tools to make this recipe:

Pastry Brush – I like a silicone pastry brush to lightly and evenly spread the oil. The silicone is also very easy to clean.

Parchment Paper – Parchment paper makes clean up a breeze and is a nontoxic alternative to aluminum foil.

Stainless Steel Baking Sheet – A good uncoated stainless steel baking sheet will last a lifetime!

Description

This How to Roast Butternut Squash recipe gives you easy instructions for how to cook butternut squash in the oven easily every time! Butternut squash is amazing as a side or the base to other dishes.


Ingredients

Scale
  • 1 whole butternut squash
  • 1 teaspoon avocado oil
  • 1/2 teaspoon unrefined sea salt
  • 1/4 teaspoon freshly ground black pepper (omit if AIP)
  • Pinch of smoked paprika (omit if AIP)

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Using a strong long knife, cut your butternut squash in half lengthwise.
  4. Scoop out the seeds and stringy fibers from each half (save the seeds for roasting)
  5. Transfer the butternut squash halves cut side up onto your baking sheet and brush the entire surface of your squash haves with avocado oil.
  6. Season with salt, pepper and paprika (only salt if AIP).
  7. Roast the butternut squash in the oven for approximately 45 minutes or until fork tender. Roasting time may vary with the size of your squash.
  8. Remove the squash from the oven and allow it to cool slightly before serving as is or before scooping out the flesh from the skin to use in your favorite butternut squash recipe. Enjoy!
