Oven Roasted Brussel Sprouts With Bacon
Growing up the only memories I have of brussels sprouts are ones that were boiled and barely seasoned. Since then I’ve discovered the keys that make brussels sprouts delicious and flavorful every time! For me seasoning is non-negotiable. I always use bacon because the added smokiness and salt takes brussels to the next level while also adding nice texture.

Oven Roasted Brussel Sprouts Recipe
The key to making the best brussels sprouts is to roast them so you get a golden brown and caramelized exterior with a tender interior. This creates an amazing textural base for the bacon and balsamic flavors to shine through!
How To Make Oven Roasted Brussels Sprouts
Oven roasted brussels sprouts with bacon are so easy to make in a few simple steps:
Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper. Toss all ingredients together on the lined baking sheet and spread out evenly in a single layer. Roast in the oven for 25-30 minutes, stirring the brussels about halfway into cooking.
Once golden and fork tender you can remove the brussels or if you like crispy edges like I do you can switch the oven to broil and watch them for 3-5 minutes. (Definitely watch them to avoid burning since each oven broils at a different speed.) Serve immediately or cool and then store in an air-tight container in the refrigerator up to 5 days for meal prep.
How Long To Roast Brussels Sprouts
The cooking time varies on this whole30 side dish depending on the size of the brussels sprouts, but medium sized sprouts roast for about 25-30 minutes. At this point the sprouts should be tender on the inside and golden on the outside. For a crispy exterior, after the roasting time ends switch your oven from bake to broil and watch them for 3-5 minutes until they reach your desired crispiness.

Ingredients
- 1 lb brussels sprouts, rinsed and cut in half with the outer leaves removed (if sprouts are varied sizes cut the larger ones again until all pieces are a similar size for even roasting)
- 4 slices of uncooked bacon, cut into 1/2 inch pieces
- 2 teaspoon balsamic vinegar
- 1 teaspoon avocado oil
- 1/2 teaspoon unrefined sea salt
- 1/4 teaspoon fresh cracked black pepper
- 1/4 teaspoon garlic powder
Instructions
- Preheat the oven to 400 degrees F.

Notes
*To reheat pre-roasted and stored brussels, spread them out on a parchment lined baking sheet and heat them in a 350 degree oven for 5-8 minutes.
