What Are Shortbread Cookies
Shortbread cookies are a traditional Scottish biscuit usually made from white sugar, butter, and wheat flour. These Paleo Shortbread Cookies use honey to replace the sugar, vegan butter or ghee in place of butter and a combination of almond flour and coconut flour in place of wheat flour.
How To Make Shortbread Cookies
This recipe is super simple and easy to make. First cream together your wet ingredients, then add in your dry ingredients and mix until they are just combined.
Next, portion out the cookie dough and press to flatten and form them into circles. Here is where you’ll place a slivered almond on top in the center of the cookie if you choose to do so and a pinch of ground cinnamon.
Bake for 10 minutes until golden brown. Once the cookies have finished cooking remove them from the oven and transfer the cookies to a wire cooling rack. Now they are ready to enjoy! It’s that simple.
Tips For Making Shortbread Cookies
- Use super fine almond flour to achieve the best texture.
- Mix only until the dough first comes together, do not over mix.
- Flatten and form the cookies by hand into the shape you want them to be prior to baking. They will not spread out if you roll them into dough balls.
