Gluten and Dairy Free Banana Bread

Wait until your bananas have spots like these - this helps with both sweetness and moisture.

Cream together eggs and sugar using a whisk or mixer.

Add the mashed bananas, oil and vanilla extract and mix.

Add in the dry ingredients: gluten free flour, baking soda, baking powder, cinnamon and salt.

Whisk until combined.

Add in dairy free chocolate chips (I recommend Enjoy Life).

Using a rubber spatula, stir the chocolate chips through the batter.

Portion batter into muffin tins and bake.

Cool in the pan for 5 minutes before moving to a cooling rack.

Eat and enjoy with your family!
