Using Saute mode melt ghee and add the garlic, ginger and spices. Deglaze the pot with tomatoes and water. Add chicken and cook on high pressure.

After the cooking is complete, stir in the coconut milk (I highly recommend the brand linked in the recipe), you can use heavy cream but the flavor is best with coconut milk.

After the coconut milk is mixed in taste and adjust to add more salt if desired.

Serve either with basmati rice or cauliflower rice and sprinkle with fresh cilantro (optional).
