In a medium sized bowl, add all ingredients except baking soda.

Mix up the batter until combined.

Now add in the baking soda and mix again. You'll see bubbles form and the batter will puff up.

Heat your cast iron skillet with oil and scoop in the sourdough pancake batter.

Once the bubbles form and the edges are crispy, flip once and cook an additional minute.

Remove the pancake and continue cooking pancakes until all the batter has been used.

Eat while warm or cool completely on a wire rack and store in the fridge.

Serve warm with butter, maple syrup and a sprinkle of cinnamon!
