Whole30 Pulled Pork Cuban Style
While I’ve never been to Cuba I’ve always dreamt of it! (I have been to Puerto Rico and LOVED it!) I love cuban flavors and this Whole30 Instant Pot Cuban Roast Pork with Mojo Criollo marinade is a true winner on both the flavor scale and the simplicity scale!
Mojo Criollo is a specific flavor blend that uses both fresh lime and orange juices along with oregano, garlic and chili powder to develop the signature flavors of the dish.

This is a great meal to make ahead for your week since there are so many different ways to utilize the leftovers and have dinner just about made for you on several different nights.
Ways To Eat Whole30 Instant Pot Cuban Roast Pork
There is no end to the ways you can repurpose this Cuban pork into different meals. My favorite way to eat this pork is as pictured in a bowl with sliced avocado, cilantro, green olives, fried plantains, marinated red onions and sprinkled with mint. You can also eat this Cuban pork over a bed of greens as a salad, in tacos, over a roasted sweet potato and over cauliflower rice (or white rice if not on a round of Whole30). However you eat it though, it’s going to be delicious!
This dish is so fresh, so tasty, and with the instant pot, oh so easy to have a flavorful dinner with almost no effort! You can also make this dish into cuban pork with the slow cooker with a little more planning but just as little effort. Plate this cuban pork sprinkled slivered with mint leaves and alongside fried plantains, green olives (these are my absolute favorites!), cilantro, avocado and marinated onion and you’ve got yourself a true feast!

Description
Whole30 Instant Pot Cuban Roast Mojo Pork flavored with citrus, garlic, oregano, and cumin. This easy and flavorful meal is perfect for any day of the week!
Ingredients
Mojo Criollo:
- 8 medium garlic cloves
- 1/2 cup orange juice (use fresh if possible)
- 1/4 cup lime juice (use fresh if possible)
- 2 Tablespoons avocado oil
- 2 teaspoons unrefined sea salt
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1/2 teaspoon ancho chile powder
- 1/4 teaspoon freshly ground black pepper
Roast:
- 4 pound boneless pork shoulder roast, cut into 6 equal sized pieces (with excess fat trimmed off)
Garnish:
- slivered mint leaves
Eat with:
- cilantro leaves
- green olives
- fried plantains (Look for yellow plantains with black spots, the darker they are the sweeter they are. Peel the plantains and cut them into 1 inch slices at a diagonal angle, fry them in avocado oil in a flat bottomed skillet over medium-high heat on each side then let them sit on a paper towel lined plate and sprinkle each side with a pinch of salt while still warm.)

- marinated onions (1/2 a red onion thinly sliced into rings, 1 cup avocado oil, 1 Tablespoon dried oregano and 1 Tablespoon apple cider vinegar mixed together in a glass jar and left to marinate briefly or up to 1 week. Recommended marination time of 1 day if possible before serving.)
Instructions
Instant Pot Instructions:
- Start by blending all Mojo Criollo ingredients in a blender until smooth, usually 1-3 minutes on high speed.
- Place your roast pieces in the Instant Pot and pour the Mojo Criollo over top.
- Place lid on the machine, lock and set valve to sealing. Select High Pressure (or Manual depending on your model) and set for 75 minutes (1 hour and 15 minutes).
- Once the cooking has finished, quick release stream, remove roast and shred.
- Retain some of the liquid to store the pork in if you plan to make this ahead or have leftovers.
- Serve with mint leaves, cilantro leaves, green olives, fried plantains, avocado and marinated onions. Enjoy!
Slow Cooker Instructions:
- Start by blending all Mojo Criollo ingredients in a blender until smooth, usually 1-3 minutes on high speed.
- Place your roast pieces in the slow cooker and pour the Mojo Criollo over top.
- Place lid on the slow cooker and cook on low for 8-10 hours.
- Once the cooking has finished, transfer the roast to a cutting board and shred.
- Retain some of the liquid to store the pork in if you plan to make this ahead or have leftovers.
- Serve with mint leaves, cilantro leaves, green olives, fried plantains, avocado and marinated onions. Enjoy!
Notes
*The versatility of this dish allows you to serve the pork roast with anything you like although fried plantains are highly recommended even if you choose to serve it differently.

Hi there! I am making this recipe, but with only 2 lbs of pork. Does the cook time change if I’m doing half the amount?

Hi Melissa,
The cooking time will stay the same. We want the roast to get just as tender. Just cut the roast into 2-3 pieces instead of 6 and cook for the same length of time.
