Meatloaf:

  • 1 pound ground pork
  • 1 pound ground turkey
  • 1 cup purple cabbage, finely shredded
  • 2 medium carrots, washed and peeled with a veggie peeler then cut into 1 inch long pieces
  • 1 small yellow onion, minced
  • 1 egg
  • 3 Tablespoons coconut aminos
  • 1 Tablespoon fish sauce
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 cups salted pork rinds, crushed
  • Garnish: green onion, cut into 1/4 inch pieces

Sweet & Sour Dipping Sauce:

  • 1/4 cup coconut aminos
  • 3 Tablespoons raw honey
  • 2 Tablespoons tomato paste
  • 1 1/2 Tablespoons apple cider vinegar
  • 1/8 teaspoon sea salt

Instructions

  1. Preheat oven to 350 degrees F. Line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine 3 Tablespoons coconut aminos, 1 Tablespoon fish sauce, 1 teaspoon sea salt, 1 teaspoon garlic powder, 1 teaspoon ground ginger, 1/4 teaspoon pepper and egg. Mix everything together until well blended.
  3. Add the prepared cabbage, carrots and onion to the large mixing bowl and stir together with the seasonings.
  4. Add the ground meat and use your hands to work the spices and veggies through the meat until evenly mixed.
  5. Transfer the meatloaf mixture into the prepared loaf pan and bake for 55 minutes until cooked through in the center.
  6. During the last 20 minutes of the meatloaf’s cook time prepare the sweet & sour dipping sauce by combining all sauce ingredients in a small sauce pan over medium-high heat until a low boil is reached then reduce to medium heat for 5-10 minutes. This will allow the sauce to thicken, continue until your desired consistency is reached. (I the 10 minute thickness for my sauce.) After your dipping sauce has thickened, remove it from the heat and set aside.
  7. Once the meatloaf is fully cooked remove it from the oven and adjust the oven from bake to broil on low. Sprinkle the crushed pork rinds across the top of the meatloaf and broil until just golden brown. *Watch the meatloaf the entire time while broiling, the pork rinds burn quickly. My broiler only took 2 minutes.
  8. Remove the meatloaf from the oven after broiling and allow it to sit in the loaf pan for 15 minutes before removing so it can reabsorb some of the liquid released in the pan during cooking. This will ensure a moist and flavorful meatloaf.
  9. After the 15 minute rest period. Slice the meatloaf and serve.
  10. Garnish with green onions and a generous amount of the sweet & sour dipping sauce and enjoy!
