Description

Sourdough Fry Bread is a delicious appetizer, snack or side dish made from your sourdough starter. It’s the perfect discard recipe, customizable with toppings and completely delicious!


Ingredients

Scale
  • 2 Tablespoon avocado oil, divided
  • 1 small onion
  • fresh rosemary
  • 1 cup sourdough starter or discard (fed or unfed) (*be sure to use an established starter more than a week old)
  • 1/4 teaspoon unrefined sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

Fry Bread with Caramelized Onions:

  1. Preheat a cast iron skillet over medium-low heat with 1 Tablespoon avocado oil. Slice one small onion thinly and mince 1 teaspoon fresh rosemary.
  2. Once the skillet is preheated, add the onion and caramelize while stirring occasionally. Lower the heat if the onions are browning too quickly verses slowly becoming golden. Caramelization should take between 15-20 minutes.
  3. After the onions are caramelized and sweet to taste, remove them from the skillet and set aside.
  4. Preheat your cast iron skillet now to medium heat with the remaining avocado oil in the skillet.
  5. In a small mixing bowl combine sourdough starter, salt and pepper. Mix well.
  6. Once the skillet is piping hot and preheated, pour the starter mixture into the skillet and cook for about three minutes.
  7. While the first side of the fry bread is cooking, top the uncooked side with the caramelized onions and minced fresh rosemary.
  8. Flip and cook the remaining side for another 3 minutes until crisp, golden and cooked through.
  9. Once cooked, remove from the skillet, slice and enjoy right away while warm. Enjoy!

Plain Fry Bread:

  1. Whether you are short on time or just not a big fan of onions, fry bread is incredibly tasty with just three ingredients. Begin by preheating your cast iron skillet to medium heat with 1 Tablespoon avocado oil in the skillet.
  2. In a small mixing bowl combine sourdough starter, salt and pepper. Mix well.
  3. Once the skillet is piping hot and preheated, pour the starter mixture into the skillet and cook for about three minutes.
  4. Flip and cook the remaining side for another 3 minutes until crisp, golden and cooked through.
  5. Once cooked, remove from the skillet, slice and enjoy right away while warm. Enjoy!

Notes

Optional Additions/Toppings:

Any of the below additions are delicious flavor combinations that can be swapped in place of the caramelized onions listed in this recipe. Only the onions will need to be cooked ahead and then set aside as the caramelized onions, all other ingredients will be added to the uncooked side of the fry bread without prior cooking needed.

  • dried Italian herb blend + balsamic glaze (added after cooking is complete)
  • sliced olives + 1 Tablespoon pesto
  • green onion + sesame seeds
  • sautéed red onion + goat cheese
