Oh do I love sourdough discard recipes!! Nothing is more satisfying than getting all the delicious sourdough flavor in a no-wait recipe all while utilizing the discard that would otherwise be lost!
What is Sourdough Discard?
If you are new to sourdough then you’re probably wondering what in the world is Sourdough Discard? Sourdough Discard is the natural bi-product of maintaining a sourdough starter. Each time you feed your starter you will first need to discard half of the existing starter. To avoid the waste that would come with truly discarding (into the trash) part of your starter you can instead use that discard to make amazing sourdough discard recipes such as this one!

Ingredients Needed:
- sourdough starter
- unrefined sea salt
- black pepper
- avocado oil
- onion (optional)
- fresh rosemary (optional)
How to make Fried Sourdough Starter:
Making Fried Sourdough Starter really couldn’t be easier! You’ll find the full recipe quantities and instruction for how to make this recipe with and without caramelized onions below in the recipe card.
This recipe begins with preheating a cast iron skillet over medium-low heat with 1 Tablespoon avocado oil. After you’ve prepped the onion and rosemary and the skillet is preheated, add the onion and caramelize while stirring occasionally. Lower the heat if the onions are browning too quickly verses slowly becoming golden. Caramelization should take between 15-20 minutes.
After the onions are caramelized and sweet to taste, remove them from the skillet and set aside. Preheat your cast iron skillet now to medium heat with the remaining avocado oil in the skillet. While the skillet is preheating, in a small mixing bowl combine the sourdough starter, salt and pepper and mix well.
Once the skillet is piping hot and preheated, pour the starter mixture into the skillet and cook for about three minutes. While the first side of the fry bread is cooking, top the uncooked side with the caramelized onions and minced fresh rosemary.
Flip and cook the remaining side for another 3 minutes until crisp, golden and cooked through. Once cooked, remove from the skillet, slice and enjoy right away while warm.
Tips for the best Sourdough Fry Bread
- Cast Iron – Cast Iron isn’t technically a cooking requirement but it does make a huge difference in texture, creating a crispy fry bread. If you haven’t invested in cast iron it’s amazingly affordable and lasts a lifetime! I love our 8 inch skillet for small jobs like eggs, love the 10 inch for everyday small family cooking and the 12 inch for big family dinners.
- Temperature – Cooking over medium to medium high heat, depending on your burners, will yield the best results.
- Starter Consistency – A thinner fully hydrated sourdough starter is easier to pour and will more easily cook through the center. If you’re starter is much thicker than a pancake batter consistency you may want to thin it out a bit with water before frying your sourdough bread.

Ingredients
- 2 Tablespoon avocado oil, divided
- 1 small onion
- fresh rosemary
- 1 cup sourdough starter or discard (fed or unfed) (*be sure to use an established starter more than a week old)
- 1/4 teaspoon unrefined sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
Fry Bread with Caramelized Onions:
- Preheat a cast iron skillet over medium-low heat with 1 Tablespoon avocado oil. Slice one small onion thinly and mince 1 teaspoon fresh rosemary.
- Once the skillet is preheated, add the onion and caramelize while stirring occasionally. Lower the heat if the onions are browning too quickly verses slowly becoming golden. Caramelization should take between 15-20 minutes.
- After the onions are caramelized and sweet to taste, remove them from the skillet and set aside.

Plain Fry Bread:
- Whether you are short on time or just not a big fan of onions, fry bread is incredibly tasty with just three ingredients. Begin by preheating your cast iron skillet to medium heat with 1 Tablespoon avocado oil in the skillet.
- In a small mixing bowl combine sourdough starter, salt and pepper. Mix well.
- Once the skillet is piping hot and preheated, pour the starter mixture into the skillet and cook for about three minutes.

Notes
Optional Additions/Toppings:
Any of the below additions are delicious flavor combinations that can be swapped in place of the caramelized onions listed in this recipe. Only the onions will need to be cooked ahead and then set aside as the caramelized onions, all other ingredients will be added to the uncooked side of the fry bread without prior cooking needed.
- dried Italian herb blend + balsamic glaze (added after cooking is complete)
- sliced olives + 1 Tablespoon pesto
- green onion + sesame seeds
- sautéed red onion + goat cheese
