Description
Whole30 Cauliflower Mash is smooth and creamy just like mashed potatoes while also being perfect for paleo, low carb and keto diets. Made with coconut milk for a velvety consistency that’s the perfect accompaniment to any healthy dinner.
Ingredients

- 1 large head of cauliflower (or two small heads), cut into florets
- 1 teaspoon unrefined sea salt
- 3 Tablespoons ghee (or dairy free butter such as Miyoko’s)
- 1/4 cup chicken bone broth or chicken stock
- 1/4 cup unsweetened full fat coconut milk
- 1 teaspoon unrefined sea salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon freshly ground black pepper
- Optional – garnish with chopped chives or green onion
Instructions
- Bring 4 quarts of water plus 1 teaspoon of salt to a boil.
- Once boiling, carefully add the cauliflower florets and cook until fork tender, about 10-15 minutes.
- Once fork tender, drain and transfer the cauliflower to a food processor with the chicken bone broth, coconut milk, salt, garlic powder and black pepper.
- Process until smooth, taste and add more salt if needed.
- Serve warm, drizzle with melted ghee, cracked black pepper and green onions and enjoy!

*Store leftovers in a sealed container in the fridge for up to 5 days.
