Instant Pot Pork Tenderloin
I love pork tenderloin, not only is it an economical cut of meat but it cooks quickly and if full of flavor! The Instant Pot makes the cooking all the easier making this recipe easy to accomplish in under 30 minutes for a meal-time win every time!

Pork Loin vs Tenderloin
Pork tenderloin and pork loin are different cuts of meat. You can tell them apart in your grocery store because pork loin is a big cut, also known as a “pork roast” like I use in my Instant Pot Chipotle Pork Carnitas. It is the perfect cut for slower roasting or pressure cooking and shreds very easily. Pork Tenderloin on the other hand is a thinner longer cut of meat that comes whole and is usually about a pound in weight. This is the cut used for this recipe that slices perfectly like you see in the photos here.
Instant Pot Pork Tenderloin with Gravy
As somewhat of a gravy fanatic, I feel qualified to say the balsamic glaze in this recipe is basically like a sweet gravy! It’s so delicious and I love drizzling it over mashed potatoes as well as the pork!
How to Make Instant Pot Pork Tenderloin

To make Instant Pot Pork Tenderloin begin by rubbing the pork tenderloin with 1 teaspoon avocado oil until evenly covered. Mix the dry spices together in a small bowl then coat the entire surface of the pork tenderloin with spices by patting on the spice mixture.
Combine the balsamic glaze ingredients in a medium bowl and set aside. Turn the Instant Pot to Sauté mode and add the 1 teaspoon avocado oil and allow to heat for 1 minute.
Next, using long handled tongs, add the pork tenderloin to the Instant Pot and sear all sides for 1-2 minutes per side. Then remove the tenderloin and set it aside. Deglaze the bottom of the Instant Pot by carefully pouring the balsamic glaze ingredients into the pot and scraping any bits off the bottom of the pot with a wooden or stainless steel spoon.
Using tongs place the pork tenderloin back into the Instant Pot in the glaze. Place the lid on the pressure cooker and lock, set the valve to sealing and select pressure cook or manual on high pressure for 10 minutes. After the cooking time is completed, do a natural release for 5 minutes before quick releasing the remaining pressure.
Remove the pork from the Instant Pot and allow it to rest on a cutting board for 5-10 minutes before slicing into 1 inch thick pieces. While the pork rests turn the Instant Pot to Sauté mode so the glaze will begin to reduce. While the glaze begins to simmer mix the arrowroot and water together completely in a small bowl then stir it into the sauce. Stir a few minutes until the sauce thickens to your liking, turn off the instant pot.
Once your sauce has thickened and your tenderloin is sliced serve the balsamic glaze over top of the pork with a sprinkle of chopped chives. I highly recommend serving this dish next to a side of these flavorful Mashed Potatoes or Creamy Cauliflower Mash = delicious! Eat and enjoy!
Whole30 Pork Tenderloin
You can easily make this Instant Pot Pork Tenderloin Whole30 by omitting the maple syrup and increasing the coconut aminos from 2 Tablespoons to 1/3 cup.
Variations on this Instant Pot Pork Tenderloin
- Make the pork tenderloin Whole30 by omitting the maple syrup in the balsamic glaze.
- If you don’t have arrowroot powder you can either thicken the sauce naturally by reducing it on Sauté mode until it reaches the desired consistency or use cornstarch in it’s place if you aren’t doing Paleo or Whole30. If you use cornstarch you’ll need more than the called for amount of arrowroot so I suggest starting with 2 teaspoons and increasing if needed after it’s fully mixed in.

Ingredients
Pork Tenderloin:
- 1–2lb pork tenderloin
- 2 teaspoons avocado oil, divided
Spice Rub:
- 1 teaspoon unrefined sea salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/4 teaspoon freshly ground black pepper
Balsamic Glaze:
- 1 cup water
- 1/2 cup balsamic vinegar
- 1/3 cup pure maple syrup
- 2 Tablespoons coconut aminos
- 1/4 teaspoon ground ginger
Glaze Thickener:
- 2 Tablespoons water
- 1 teaspoon arrowroot powder
Garnish:
- Fresh chives, cut thinly
Instructions
- Rub the pork tenderloin all over with 1 tsp avocado oil. Mix the dry spices together in a small bowl then coat the exterior evenly with spices.
