Baked Chicken Meatballs

Truth be told I’m on a meatball kick! I mean, why have I not been making meatballs weekly?? These Baked Chicken Meatballs with Apple and Cheddar are the perfect meatball for busy days and easy dinners.

Chicken Apple Meatballs

I’ve had trouble with meatballs in the past and I think it had to do with making them on a stove top, what a pain. But these easy baked meatballs are juicy, tender and packed with so much fall flavor! They are the perfect quick and easy weeknight meal or for making ahead and storing in the freezer! I’m definitely going to double or triple the batch next time to fill the freezer because what is better than homemade frozen food just waiting to be reheated in 10 minutes?!? I can’t think of anything.

Description

Baked Chicken Apple Meatballs are bursting with juicy apples and gooey cheddar cheese! Gluten free and made with almond flour, you’re family is sure to request these moist and easy to make healthy chicken meatballs time and time again!


Ingredients

Scale
  • 1 pound ground chicken
  • 1/2 an apple, peeled and chopped into 1/2 inch cubes (I used a honeycrisp)
  • 1/4 pound sharp cheddar, cut into 1/2 inch cubes (18 cubes)
  • 1 egg
  • 1/4 cup almond flour
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon unrefined sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a large mixing bowl, scramble the egg.
  3. Then mix in your apple, almond flour, fresh thyme, salt, pepper, and garlic powder.
  4. Once everything but the meat is combined, add in the ground chicken and mix.
  5. Using the back on a fork, mash the ground chicken as you mix it into the other ingredients so that everything is fully combined.
  6. Set up your meatball assembly area by setting out your baking sheet lined with parchment paper, your meatball mixture and cubed cheddar.
  7. Using your hands (the mixture will be wet and sticky, this is ok and makes for moist flavorful meatballs!), scoop about a Tablespoon of the meatball mixture and create a well to stuff with a cube of cheddar, form the meatball around the cheddar and plop it on the baking sheet. Repeat until all meatballs are made.
  8. Bake meatballs for 25 minutes until cooked through and slightly golden.
  9. After the cooking is complete, allow to cool slightly before serving or cool completely and freeze for later.

Notes

*Cooked and cooled meatballs will last in the frig for 2-3 days.

*To freeze, keep the meatballs on the same baking sheet and lay it flat in your freezer for 2 or more hours before transferring to a zip lock freezer bag. Label the freezer bag with the contents and the date baked.

*To reheat directly from frozen, place frozen meatballs on a baking sheet in a 350 degree F oven for 10 minutes.
