How to Roast Garlic Cloves

For over a decade I’ve been roasting my own garlic and using it from everything to making soups, topping pizza and eating plain (it’s that good!) I know that roasted garlic may seem fancy and boy does it transform the flavor but really few things are more simple. Keep reading for my simple instructions and tips on How To Roast Garlic perfectly every time with minimal clean up!

Ingredients and Tools to make Roasted Garlic

  • whole heads of garlic
  • avocado oil
  • unrefined sea salt
  • black pepper
  • baking sheet
  • foil
  • cocktail forks

How to Make Roasted Garlic

After peeling most of the outside skin off the garlic heads, cut just the very tops off each garlic clove and place the garlic on a square of foil. Drizzle the garlic head with avocado oil and sprinkle with salt and pepper then wrap up the whole head in foil and seal like I did in the above photo. Place on a baking sheet and bake as directly in the full recipe listed below.

Here is the final result, perfectly roasted garlic that is sweet, caramelized and salty!

Why I love Roasting Garlic

  • Roasting garlic transforms it as it caramelizes from the sugar concentration that happens during cooking. It becomes buttery in flavor, with a sweetness and deep complex flavors void of it’s former sharpness, pungency and bite.
  • Roasted garlic can be easier to digest for many people.
  • It adds so much depth of flavor to dishes and can be added to any savory meal. It’s perfect in soups, mashed vegetables, dressings, marinades, sauces, etc.
  • It is a great way to preserve garlic. Once you roast the garlic you can mash it and store in in the fridge or even freeze it for longer storage.

How to store Roasted Garlic

How to store roasted garlic is in a covered air-tight container in the fridge. It will last this way for about 2 weeks. I like to store mine in a pint sized mason jar with a reusable lid after the garlic has been peeled. If you’d like to keep the garlic longer it can also be frozen.

Can you Freeze Roasted Garlic?

Yes! When freezing roasted garlic, allow it to cool completely and remove it from it’s skin. Stack the roasted garlic cloves in a pint sized glass mason jar and pour in enough oil of your choice to cover the cloves completely. Mark the jar with the date and freeze for up to several months. Once you thaw out the jar you can also use the garlic flavored oil to cook with.

How to use Roasted Garlic

You can use roasted garlic in numerous ways. You can pluck those little jewels with a cocktail fork and eat them on the spot….yes, seriously! The intensity of the garlic mellows considerably when roasted. One of my favorite ways to use roasted garlic is to mash the roasted garlic cloves with more salt until it becomes a paste for lavishly spreading on a crusty baguette. It’s so delicious! Or save the roasted garlic for a recipe like my Creamy Potato Leek Soup!

Description

How to Roast Garlic – Roasted garlic is so easy to make and a great staple to keep on hand to boost the flavor of any recipe! All you need are whole heads of garlic, a bit of oil, salt and pepper. Roasted garlic is healthy and a great way to add flavor and nutrition to any recipe.

Ingredients

Scale
  • Any number of Garlic Heads
  • 1 teaspoon avocado oil per garlic head for drizzling
  • generous pinch of unrefined sea salt per garlic head
  • pinch of freshly ground black pepper per garlic head

Instructions

  1. Preheat your oven to 400 degree F.
  2. Cut approximately a 7 inch square of foil for each garlic head you are roasting.
  3. Peel the exterior skin off the garlic but leave enough skin so the cloves stay attached to the head.
  4. Cut off the very tips of each clove by slicing off the very top of the head of garlic.
  5. Place each head of garlic you are roasting on their own square of foil and drizzle each with about 2 teaspoons of avocado oil. Then sprinkle with salt and pepper.
  6. Close up each foil packet by twisting the top until sealed, like pictured above, and place on a baking sheet.
  7. Bake for 45 minutes then remove and carefully open foil packets (steam will escape) to allow to cool.
  8. Once cool enough to handle you can either pluck individual garlic cloves from the head (I like using a cocktail fork for this), or squeeze the head of garlic like a tube for more of a paste consistency.
  9. Using immediately or store in the fridge for up to 4 days or mash into a paste with salt and freeze for later use.
