Instant Pot Shredded Chicken

Shredded Chicken in the Instant Pot is one of the most versatile ways to meal prep. This chicken comes out lightly seasoned and full of flavor while still being a blank canvas so you can use it in multiple different recipes if you choose. This shredded chicken would be awesome mixed with some additional spices for chicken tacos, added to soups, made into a chicken salad or used in a rice or spaghetti squash bake!

Instant Pot Chicken Ingredients

To make this Instant Pot Shredded Chicken Recipe, you will need the following ingredients:

  • Chicken – This recipe will work with either chicken breasts or thighs. I use boneless typically but you are welcome to use bone-in chicken as well.
  • Chicken Bone Broth / Stock – Besides salt, I truly think this is the most important element of the recipe. While you could use water in place of the broth in a pinch it just isn’t as good. If you want the BEST shredded chicken then you want to use a high quality homemade or bought chicken broth.
  • Seasonings – This recipe uses the simple mix of unrefined sea salt, fresh black pepper and garlic powder.

How To Make Shredded Chicken In The Instant Pot?

To make this Instant Pot Shredded Chicken, you simply combine all the ingredients in the Instant Pot, lock the lid, set the valve to sealing and select the time for either fresh or frozen chicken, cook and then shred and toss back through the broth/juices! It’s so simple and unbelievable good!

Instant Pot Chicken Breast Cook Time

Chicken breasts come in a variety of sizes, here is a helpful guide to follow based on the size you are using (applies to fresh not frozen chicken breasts only):
-10 minutes at high pressure / manual for chicken breasts that are 4 to 7 ounces in size.
-12 minutes at high pressure/ manual for chicken breasts that are 8 to 12 ounces in size.
-15 minutes at high pressure / manual for chicken breasts that are 13 to 16 ounces in size.

Instant Pot Chicken Breast Frozen

You can make this recipe by using either fresh or frozen chicken breast. When using frozen you will cook the chicken longer but will still get the same great tender and full flavored result!

How Long Does Cooked Chicken Last In The Fridge?

Cooked chicken will last in the fridge for 3-4 days. If you don’t use it during that time you can freeze the cooked chicken for 2-6 months.

Description

Instant Pot Shredded Chicken is the easiest recipe perfect for meal prep and to make chicken tacos, chicken salad and so much more! You can use either fresh or frozen chicken breasts and it comes out perfectly tender and juicy every time!

Ingredients

Scale
  • 1 pound boneless chicken breasts (or thighs)
  • 1 cup chicken bone broth or low-sodium chicken stock
  • 1 teaspoon unrefined sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Pour the bone broth into the bottom of the Instant Pot then place the chicken breasts into the broth and sprinkle the chicken with salt, pepper and garlic powder.
  2. Place the lid on the Instant Pot and set the valve to sealing.
  3. *FRESH/UNFROZEN CHICKEN BREASTS: Cook on high pressure / manual for 12 minutes.
FROZEN CHICKEN BREASTS: Cook on high pressure / manual for 18 minutes.
  4. After cooking, allow the pressure to naturally release for 10 minutes before quick releasing the remaining pressure carefully by turning the steamer valve to venting.
  5. Using tongs, transfer the chicken breast to a plate or cutting board and shred while warm with two forks. Alternatively if you have a stand mixer you can transfer the chicken to the mixer bowl fitted with the paddle attachment and shred the chicken by turning on the mixer to medium speed.
  6. Once shredded toss the chicken back through the broth until fully coated.
  7. Eat immediately or store (with the broth) in a sealed container in the fridge for up to 3-4 days.

I use a hand mixer to shred my chicken. I shred it right in the pressure cooker pot. If it’s really liquidy, I will drape a hand towel or something over the pot so it doesn’t splash everywhere while shredding.
