Vegan Kale Chips

Whether or not you’re craving a healthy snack or just have left over kale to use up – vegan kale chips are definitely the way to problem solve!​ So simple to make and pleasing to even the pickiest of eaters, these chips are sure to be a win all the way around!

Ingredients to make this Kale Chips Recipe:

  • 1 bunch of kale
  • avocado oil
  • raw cashews
  • nutritional yeast
  • garlic powder
  • salt

How to make Vegan Cheesy Kale Chips

Making Vegan Kale Chips is incredibly easy. Begin by preheating your oven and tearing the kale into small pieces. Then add the cashews, nutritional yeast, garlic powder and salt to a food processor and pulse until the pieces of cashews are as small as sesame seeds. Set the mixture aside while you massage the avocado oil into the kale leaves and then sprinkle the leaves with the seasoning mixture and toss until the leaves are well coated. Working in batches, lay some of the kale out on a parchment paper lined baking sheet and bake. Once the kale chips are done transfer them to a plate to completely cool and work on the next batch, repeat until all kale chips have been made. Once cooled, eat or store in an air-tight container for up to a week.

Description

Baked “Cheesy” Vegan Kale Chips are the perfect healthy crispy snack made with cashews and nutritional yeast. The best flavorful kale chips – paleo and whole30!


Ingredients

Scale
  • 1 bunch of Kale, rinsed and dried thoroughly
  • 1 teaspoon avocado oil
  • 1/4 cup raw cashews
  • 3 Tablespoons nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon unrefined sea salt

Instructions

  1. Preheat oven to 275 degrees fahrenheit.
  2. After washing and drying the kale tear into small (1 inch-ish pieces), discard any large stems.
  3. In a small food processor add raw cashews, nutritional yeast, garlic powder and salt. Blend until cashews are very small. Then set aside.
  4. In a large mixing bowl add kale and drizzle very lightly with avocado oil, massage oil into kale pieces with hands.
  5. Then sprinkle cashew mixture over the kale until well coated, mix until all pieces are coated.
  6. Transfer seasoned kale to a baking sheet lined with parchment paper. Do not over crowd the baking sheet. (A whole bunch of kale will require multiple batches. Approximately 3 whole kale leaves will fill a baking sheet and be considered 1 batch.)
  7. Bake kale chips for 17-20 minutes.
  8. Once baked, remove and allow to cool before enjoying. Store all remaining chips in an airtight container.
