Sometimes you need to spice up your breakfast routine! If you’re like me and often stick to the same few things for breakfast this easy Baked Whole30 Breakfast Sausage Recipe is for you. Chorizo Breakfast Sausage
Inspired by a breakfast chorizo hash, I created this quick and easy chorizo breakfast sausage recipe that can be baked so you (and I) can use your morning time for other things like getting ready or chasing your toddler around the house, you know whatever it is that fills your mornings! Bonus, these spicy little patties contain some not so hidden greens and other veggies. Just another tasty way to add more veggies to your day. Make these up in advance for a quick, ready to go morning breakfast that’s packed with flavor and protein.
How To Make Whole30 Sausage
These Whole30 Sausage Patties are so easy to make. Simply combine all ingredients in a large mixing bowl. Portion into patties and bake on a parchment lined baking sheet. Eat straight out of the oven or cool completely and store in the fridge for up to a week or freeze for longer storage.
How To Freeze Whole30 Sausage
To freeze these breakfast sausages, allow them to cool completely in the fridge and then lay them out in a single layer on a baking sheet. Set the entire baking sheet in the freezer just until the patties are frozen and then transfer the Whole30 Sausage Patties to a sealed air-tight container marked with the date they were made. They will store in the freezer for up to 3 months.
How To Reheat Whole30 Breakfast Sausage
These baked chorizo breakfast sausage patties can be made ahead of time and stored in the fridge or freezer. Then simply reheat what you need in the morning to make yourself a filling and flavor-packed breakfast to start your day off right!
To reheat a baked refrigerated patty, heat through and sear both sides in a skillet over medium heat with a little avocado oil.
To reheat a frozen cooked patty, place the patty overnight in the refrigerator until thawed before searing in a skillet as listed above or reheat in the microwave until warmed through.
How To Eat Baked Chorizo Breakfast Patties
I absolutely love these patties topped with a poached egg! I’m a HUGE fan of that runny yolk you see below. These patties would also make a delicious breakfast burger if you sandwich it between two sweet potato buns (roast the buns like I did for these sliders) and top with some mashed avocado. Absolutely delicious.

Description
This incredibly flavorful Chorizo Whole30 Breakfast Sausage is the perfect easy, make ahead breakfast solution and simple Whole30 meal prep. Think whole30 breakfast hash in easy sausage form! It’s a wonderful freezer friendly breakfast option.
Ingredients
- 1 pound sugar free ground pork chorizo sausage
- 1 small yellow onion, diced
- 2 cups kale, chopped in very small pieces
- 1 cup frozen hash browns
- 1 large egg
Instructions
- Preheat oven to 400 degrees fahrenheit and line a baking sheet with parchment paper and set aside.
- Chop the kale into very small pieces and set aside.
- Dice your onion and sauté in ghee or avocado oil until cooked through and translucent.
- Transfer cooked onion to a large mixing bowl and add to the bowl, ground chorizo, chopped kale, frozen hash browns and your large egg.
- Using your hands mix all the ingredients until well incorporated. Then make small patties and space them out evenly on your parchment paper lined baking sheet. (I cook in two batches, cooking 6 patties at a time.) Bake for 10 minutes on one side and then flip and bake another 10 minutes for a total of 20 minutes.
- Finish cooking all sausage patties and store in an airtight container in the refrigerator or freeze some patties raw for later use.
- Once ready to eat your cooked patties, heat through and sear both sides on the stove top for a crispy exterior. Enjoy!

*I recommend these be eaten with either a poached or fried egg on top.

Hello – this sounds delicious! I can’t seem to find any frozen hash browns that are Whole30 compliant. Can we make this with freshly shredded potatoes? If so, does the portion change at all or do I need to do anything different? Will fresh potatoes be too wet? Thanks!
