Ingredients to make Healthy Chicken Breast Marinade
- water
- dried chipotle chile peppers
- orange juice
- lime juice
- chicken bone broth
- garlic cloves
- avocado oil
- salt
- ground cumin
- dried oregano
- black pepper
Helpful tools to make this recipe:
- Gloves – I recommend wearing gloves whenever working with chiles of any kind. The gloves will prevent any of the chile’s oils from getting onto your skin.
- High-Heat Temperature Bowl – When pouring boiling water into a bowl, not just any boil can handle the heat. Make sure the bowl you are using can withstand the temperature.
- Blender – A good high speed blender is vital in getting a smooth and perfectly combined sauce.
How to make Chipotle Marinade for Chicken
This chicken marinade is made in just three easy steps!
- De-seed the dried chiles and rehydrate them in boiling water.
- Add the rehydrated chiles and their soaking liquid to the blender with all other remaining ingredients and until smooth.
- Use the marinade immediately or stove in the refrigerator.

Ingredients
- 3/4 cup boiling water
- 4 dried chipotle chile peppers
- 1 cup orange juice
- 1/4 cup fresh lime juice
- 1/2 cup chicken bone broth or low-sodium chicken stock
- 10 garlic cloves
- 1 Tablespoon avocado oil
- 3 teaspoons unrefined sea salt
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon fresh ground black pepper
Instructions
- De-seed dried chipotle chile peppers and place in a small high-temperature safe bowl. Cover chile peppers with 3/4 cup boiling water and set aside to rehydrate for 5 minutes.
- Add the remaining ingredients to a high-speed blender such as a Vitamix. Once rehydrated add the chile peppers and their soaking liquid to the blender and blend on high-speed for 1-2 minutes until smooth.
- Use the blended marinade immediately or store in the refrigerator for up to a week. This sauce is great for cooking chicken, pork, steak or vegetables.

This is so good! Followed the recipe to the letter. Perfectly balanced, with an ideal heat level. Just the right amount of salt (I used Mexican sea salt), and the cumin isn’t overpowering. I used Morita chipotles, which are made from fully ripe, red jalapeno chiles. They resulted in a beautiful orange color, and excellent smoky flavor with the right amount of bite. I picked up a big bag at my local international farmers market.
I made a double batch, and it barely fit in my Blendtec blender. So glad I doubled it, because I’m using it in everything. I’m going to use half in instant pot carnitas. Can’t wait!
