Porcini Salt

We’re pretty big fans of salt around here so it’s about time I share with you a salt recipe I’ve been using for some time now as my secret ingredient to add depth of flavor to EVERYTHING! I’m talking stir fry, any ground meat, steak, roasts, soups, pastas, french fries, veggies and the list goes on. I guarantee you’ll be amazed at just what this mushroom salt can add to a whole host of your favorite dishes!

Mushrooms for this recipe

Let’s take a minute and talk about what types of mushrooms you could use for this recipe. While just about any type of dried mushroom will work I would recommend the following types:

  • Porcini – I use dried porcinis for this recipe most often because they are easy to find, affordable and have a great strong nutty flavor.
  • Shiitake – Dried shiitake mushrooms are deeply rich and buttery making them a perfect addition to most recipes.
  • Chanterelle – Chanterelles have a distinct tastes that is slightly fruity and peppery.
  • Morel – Morels are known for their earthy nutty flavor that offers a smokey aroma.
  • Portobello – Similar in flavor to the mild button and cremini mushroom however they are richer with more umami flavor.
  • Variety – All of the above would make an incredible variety blend for this recipe!

*Be sure to use dried mushrooms for this recipe and not fresh as fresh raw mushrooms will not work in this recipe.

What is umami seasoning made of?

Umami seasoning at it’s core is a combination of 2 ingredients, salt and ground dried mushrooms. This umami seasoning recipe is just that, however, you can get creative and certainly add in more spices to the mix to suit your needs. Garlic powder, dried thyme, dried rosemary and black pepper would all be great additions to a multipurpose seasoning blend.

Homemade Mushroom Salt

While you can certainly purchase pre-made mushroom salt or umami seasoning, it’s one of the easiest things you’ll ever make and homemade saves you money while being able to hand pick the quality of your ingredients.

All you need to make this mushroom powder recipe is a large or small food processor, blender or a mortar and pestle to make homemade mushroom powder. I like a slightly chunky powder mix but you can process the mushrooms into a fine powder if you prefer.

After grinding the dried mushrooms into mushroom powder, simply stir together the mushroom powder and the salt and you now have a wonderful umami salt! My favorite salt for this recipe is Redmond Real Salt. I love it so much I buy it in bulk at a discount. It’s an unrefined ancient sea salt full of minerals and mined right here in the United States of America.

Store the finished mushroom salt in an airtight container and use it as you would salt in all your favorite savory dishes!

How long does Porcini Salt last?

Ground fresh and stored in an airtight container, Porcini Salt will last for a minimum of one year.

How to keep spices fresh longer

Flavor and freshness can be extended when the spice is stored in an airtight container just large enough for the spice without extra room for air, out of direct sunlight and at temperatures below 70 degrees fahrenheit.

Ingredients

Scale
  • 0.75 oz dried mushrooms, such as porcini
  • 1/3 cup unrefined sea salt

Instructions

  1. Add the dried mushrooms to a high speed blender or food processor, secure the lid and pulse or blend for 1-2 minutes until you reach your desired grind.
  2. In a mixing bowl, combine the mushroom powder and fine sea salt and mix.
  3. Transfer your mushroom salt to an airtight container and enjoy with all your savory dishes!
