Healthy Chicken Tender Recipe

As my daughter gets older I start thinking about all the classic kid foods that hold a special place in my heart. Foods I hope she will also enjoy but that I hope to make in a healthier version for her. I think we can agree that when it comes to making healthier versions of convenience foods often they can come with either extreme cost or be very time consuming! Neither of which are a mom’s friend, so I’m super happy to offer this healthy chicken tenders recipe which is both quick and cost effective.

Gluten Free Chicken Tenders

High in protein and breaded in an egg wash with a combination of almond and coconut flours this gluten free chicken tenders recipe is just as tasty as the gluten-filled frozen versions at the grocery store!

Ingredients to make Almond Flour Chicken Tenders

  • chicken tenders
  • eggs
  • almond flour
  • coconut flour
  • salt
  • smoked paprika
  • garlic powder
  • black pepper

Dipping Sauces:

  • Honey Mustard (recipe listed below)
  • The BEST Ranch Dressing
  • Tomato Free BBQ Sauce (our newest obsession!)

How To Make Paleo Chicken Tenders

These paleo chicken tenders take 20 minutes to bake and are ready to serve. Pair with this incredibly simple 2 ingredient honey mustard sauce everything comes together in a flash! I hope your family enjoys these as much as mine does.

To begin, preheat your oven to 375 degrees F. Line your baking dish with parchment paper. Assemble your dredging station with two plates. One with the two whisked eggs and the other with almond flour, coconut flour, salt, smoked paprika, garlic powder and pepper. Mix the flours and spices together until evening incorporated.

Keeping one hand wet and the other dry dip each chicken tender into the whisked egg and then into the breading mixture until completely coated. Lay breaded tenders on the lined baking dish. Once all the chicken is coated and your oven is preheated, bake for 10 minutes and then remove the chicken turn each over and continue baking on the other side for another 10 minutes. The chicken will bake for 20 minutes total.

Once the cooking time is complete, remove the chicken from the oven and check to see that the chicken has reached an internal temperature of 165 degrees F. Then allow to cool slightly and enjoy with the honey mustard dipping sauce or our favorite ranch dressing.

Whole30 Chicken Tenders Recipe

This recipe for chicken tenders is Whole30 compliant without the honey mustard dipping sauce. Instead use a compliant sauce like Whole30 Ketchup, spicy mustard or my compliant ranch dressing recipe!

What to Serve Baked Chicken Tenders With:

These chicken tenders are perfect as a full meal, snack, salad topping or as a sandwich filling! Below are a few ideas of how to serve them.

  • As a Full meal – with Mashed Potatoes and Gravy or Coleslaw.
  • On a Sandwich – topped with Pesto and fresh veggies.
  • As an Appetizer or Snack Tray – with Deviled Eggs, Bacon Wrapped Dates and Stuffed Jalapeno Peppers.
  • As a Side Dish – to Creamy Potato Leek Soup or Pasta Salad.

Chicken Tenders Freezer Recipe

You might be asking: How long can you keep chicken tenders in the freezer? If you’d like to make a batch of these chicken tenders to keep in the freezer simply follow the recipe, bake the tenders and allow them to cool completely. Then lay them in a single layer on a baking sheet and freeze until solid, once solid add the tenders to a zip lock bag or other air-tight freezer container. They will keep in the freezer for up to 6 months and make great easy meals.

Chicken Tenders:

  • 1 lb chicken tenders
  • 2 eggs, whisked
  • 1/2 cup blanched almond flour
  • 1/4 cup coconut flour
  • 1 1/2 teaspoons unrefined sea salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly cracked black pepper

Dipping Sauce:

  • 1/4 cup raw honey
  • 1/4 cup yellow mustard

    *OR make The BEST Ranch Dressing (perfect for both Whole30 and Keto)


Instructions

  5. While the chicken cooks mix your simple 2 ingredient Honey Mustard Sauce. Simply stir together 1/4 cup of raw honey and 1/4 cup of yellow mustard over low heat in a small sauce pan.
  6. Once the cooking time is complete, remove the chicken from the oven and check to see that the chicken has reached an internal temperature of 165 degrees F. Then allow to cool slightly and enjoy with the honey mustard dipping sauce or our favorite ranch dressing.

*Chicken Tenders may be stored in the fridge in an air-tight container for up to 5 days or frozen for up to 6 months. (See details for freezing listed above the recipe card.)

    I cannot use coconut flour. Is there another flour I could use with the almond? I don’t need to be paleo, just gluten free. TIA

      Hi Bonnie, I’d recommend using equal parts cassava flour and almond flour in place of the coconut flour, 1/2 cup of both. Coconut flour absorbs a lot of liquid and is what helps with the crisping of the tenders so that’s why we would want to increase the cassava flour ratio in it’s place. Great question. Enjoy!

    Hi! Is there a way I could make these ahead and freeze them?

      Hi Hannah! Yes, after baking allow them tenders to completely cool and then freeze them on a sheet pan in a single layer. Once frozen transfer them to a storage container and keep in the freezer until needed. Enjoy!
